Gentle pressing of the clusters, cryomaceration on the skins to extract fruit aromas and varietal characteristics of the montepulciano grape, followed by static cold-settling of the must, then controlled-temperature fermentation, followed by maturation in stainless steel.
Sensory profile
The wine appears a lively cherry red, while the nose exhibits lovely floral and fruit fragrances, redolent of violets and pungent underbrush. the palate is crisp, refreshing, and quite smooth, with a classic hint of almond on the finish. this cerasuolo is ideal paired with first courses and lighter meats, as well as fresh cheeses, and delicious with any kind of fish, particularly soups and grilled fish. the adventuresome will want to try it with pizza.
