Vinification
Gentle pressing of the grapes, a brief maceration on the skins of about 36 hours, with the wine drawn off at the formation of the floating cap (“ad alzata di cappello”) and then fermented at a controlled temperature.
Sensory profile
The wine appears a vibrant, luminous cherry red, classic to this style of wine. The nose exhibits lovely floral and fruit fragrances, while the palate is crisp, refreshing, and beautifully balanced, with a delicious hint of almond. This cerasuolo is ideal paired with first courses and lighter meats, and goes particularly well with fish.
Cellar ability:
It is best enjoyed within two years.
